Fried Eggplant Burgers with Tomato and Lettuce Recipe

Crispy fried eggplant rounds, juicy tomato slices, and fresh lettuce leaves are used to make these vegetarian burgers. They are a tasty and filling meal that can be enjoyed on any day of the week.

  • Prep Time: 40 minutes
  • Cook Time: 10 minutes
  • Total Time: 50 minutes

Instructions

  • Sprinkle salt over the eggplant rounds in a colander.
  • Allow for 30 minutes to drain excess water.
  • Combine the flour, garlic powder, salt, and pepper in a shallow bowl.
  • Beat the eggs in a separate shallow bowl.
  • Mix the breadcrumbs and parmesan cheese in a third shallow bowl.
  • Rinse and pat dry the eggplant rounds with paper towels.
  • Coat each eggplant round in flour, then in the beaten eggs and finally in the breadcrumb mixture.
  • In a large skillet over medium heat, heat the vegetable oil.
  • Fry the eggplant rounds in batches for 2-3 minutes per side, or until golden brown and crispy.
  • Place a lettuce leaf, a slice of tomato and a fried aubergine round on each bun to make the burgers.
