Instructions

  • Mash the chickpeas with a fork or potato masher in a large mixing bowl.
  • Combine the breadcrumbs, onion, bell pepper, parsley, egg, sun-dried tomatoes, Parmesan cheese, salt, and pepper in a large mixing bowl.
  • Combine thoroughly.
  • Make four patties out of the mixture.
  • Melt butter in a nonstick skillet over medium-high heat.
  • Cook for 5-6 minutes per side, or until browned and heated through.
  • The burger buns should be toasted.
  • On the bottom half of each bun, spread tomato sauce.
  • On each bun, place a lettuce leaf and a slice of tomato.
  • On top of the tomato slice, place a patty.
  • Serve right away.
